Signature Wings

We have the absolute best wings in Nashville. Chicken wings are a necessity at almost every sporting event!  Here is a healthier grilled variation on the traditional fried chicken wing. Crazy Melvin Says: “An average person will probably eat 5-10 wings. Joseph “Jaws” Chestnut ate 214 chicken wings in 30 minutes to win this year’s Wing Bowl.

Crispy Chicken Wings

Whip out the deep fryer for these classic wings. Ingredients: Chicken Wings (Thawed if Frozen) 2 cups all-purpose flour 1 ½ T. Kramer’s Wing Rub (Choice of Heat) + more for sprinkling. Kosher Salt Oil for deep frying Directions: Start as if you are making Kramer’s Signature Wings.

Buffalo Style Wings

Traditional Buffalo wings with a Kramer’s kick. Ingredients: Chicken Wings (Thawed if Frozen) Kramer’s Wing Rub (Choice of Heat Level) Olive Oil 1 bottle Wing Sauce (Franks, or your favorite) ½ Stick  Unsalted Butter, melted   Directions: Start as if you are making Kramer’s Signature Wings.

Cilantro Blue Cheese Dipping Sauce

The perfect compliment even the hottest wings… make it in a few minutes, let it sit, then break it back out for wing time! Ingredients: ½ C. Sour Cream or Greek Yogurt ½ C. Mayo ½ C. Blue Cheese Crumbles 1 Tb. White Wine Vinegar 2 Garlic Cloves, Finely Chopped 3-4 Tb. Chopped Cilantro.


This chili is good enough to win a cook-off, but easy enough for family dinner! As traditional Texas Chili, this recipe doesn’t have beans!  But, if you want to go against tradition, knock yourself out by adding pinto beans, corn, tomatoes, or anything you’d like! This recipe can be multiplied or cut in half! 

Egg Rolls w/ Avocado Dip

      These rolls go FAST, so make extra! These should be made in advance and frozen (before frying). Crazy Melvin says: “Keep Austin Weird!” Ingredients: 2 Boneless Chicken Breasts 2-3 Ears of Corn, shucked 2 Red Bell Peppers, diced 4 Green Onions, chopped (white and light green parts) 1 C. Canned Black Beans

Texasian Chicken Potstickers and Dipping Sauce

These babies are a bit more time consuming, but well worth it! These can be made in advance (stuffed, but not cooked) and frozen for up to a week! Ingredients: 1 ½ lb Ground Chicken 2-3 Garlic Cloves, finely chopped 3 Green Onions (white & light green sections), finely chopped 2 Tb. Fresh Ginger
